hello!
It seems such a long time since I sat down and wrote a personal post. It’s been all go here. The last 2 years really have flown by for me. Yes, we’ve had some downs which COVID is probably 95% responsible for but there have been over little hiccups due to other factors. There have been good points, like knowing who really were my friends when I had to shield, the ones who were there to help with ever asking and the ones go were far away who gave moral support especially when it was needed plusMy Kitchen a few little local adventures too.
I’ve been loving living by the sea and love to go down just before sunset. It’s lovely just to sit beside the sea, breathe in the sea air even on a cold cloudy day. I just seem to sleep better too and it’s worth the bus ride down from town as I can’t walk anywhere near that far now. Chronic illnesses suck!
I’ve been getting some horrid headaches and I’ve booked an appointment at the opticians just to make sure it’s nothing more than needing new glasses as opposed to the issues I had this time last year which resulted in laser treatment and injections. Let me tell you they were not nice! My eye sight certainly deteriorated after the bleed in my eye and I really need to go to the opticians to double check every things ok.
I’ve enjoyed eating out at the local pubs and this yummy burger is a huge hit with us all.
I also had the chance to make 53 dozen mince pies, well it felt like 53 dozen! I also tried out a new recipe I had been working on; gingerbread cake with gingerbread frosting. They tasted lovely, one tip, only put the gingerbread on just before you serve as it goes a little soggy if you leave it on overnight. Recipe will be coming soon on my foodie blog Candace’s Kitchen.
Gwrych Castle is less than a mile from my house. You get a stunning view from on the promenade in Pensarn. Made a few visits here last summer and it was lovely to see I’m A Celebrity back in our town for the second year. There are amazing views from the castle. If you are ever in the area come take a look at the castle. Having a picnic on the grass here on a sunny day, yes, we do have some sunny days in Wales! is a great way to spend your afternoon.
*Please note the castle isn’t open until March and there was a booking scheme last year so please check their website if you are planning a visit.
We attempted a family photo. The little buggers wouldn’t keep still and my son and myself ended up with lots of scratches! In the end I actually videoed us and picked the best frame out. You can guess the ones who wriggle from the way neither of them are looking at the camera!
It’s now the start of January. All signs of Christmas have now been packed away and doesn’t the house look so bare?
I need to buckle down and get my head in work mode after taking 10 days off over Christmas and New Year. It was was very much needed to switch off the computer and put my phone on silent but if wasn’t a rest. It was just 10 days of complete chaos. I don’t think anybody had done any washing for about 3 weeks and they all bought their dirty clothes with them. The washing machine and tumble drier just seemed to be on permanently!
When I did go back to work the emails I had received on actual Christmas Day were huge. They weren’t just from people who were in countries that don’t celebrate but UK businesses telling me about the sales which had just started. I mean who goes shopping on Christmas Day?
I’m not a religious person but Christmas is for spending time with family not bagging a new TV with 30% savings especially when the tv’s have been creeping up in price since Black Friday! When did we turn in to a nation where we go shopping on Christmas Day? It was lovely to see supermarkets closing on Boxing Day. I mean lets be honest, everybody had enough food to last a week!
But now it’s time to set some goals for the year, make plans for my blogs (I also write Candace’s Kitchen and I am working on some more blogs behind the scenes which I hope to launch later this year) and work some more on the little book I am working on.
I hope your Christmas and New Year were all you hoped for and for those whose plans were spoilt by COVID, I’m sending hugs and hope you can celebrate with loved ones soon.
I am off to put my feet up with a cup of tea, well maybe two to decide what I am going to do this year both on my blogs and on the house renovations (there’s plenty to do still).
