Pancake Recipe

Pancakes! I just love them. I love sweet ones with lemon and sugar and also savoury ones with chicken and leek in a white sauce being a huge favourite. Pancakes really are easy to make from scratch and are much cheaper than using a ready made batter.

To make crepe pancakes you will need:

  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • Pinch of salt
  • Oil for cooking
  • Lemon and sugar to serve

To make the pancakes:

  • Beat the eggs together and mix in the milk
  • Let the batter chill in the fridge for at least an hour
  • Add the flour and salt and beat well
  • Add a little oil to a frying pan and heat
  • Put a laddle Of batter in the pan and swirl around

  • When the mixture has cooked on the top (about 1m) turn, or if you are brave toss the pancake
  • Cook for about 30 seconds on the second side
  • Serve with lemon and sugar

    Yum..I have a similar recipe. Made these this morning for my kids for Shrove Tuesday. 🙂
