Christmas Food; Prawn Cocktail

I’m not sure if you have a starter or not with your Christmas lunch but even if you don’t this classic and simple to make prawn cocktail is a lovely addition to any meal or as a main for a light lunch.  This recipe is 5 simple ingredients:

    • Pre cooked prawns
    • Lettuce
    • Mayonnaise
    • Tomato ketchup
    • Lemon wedges

No cooking is required which makes this starter an ideal recipe for the kids to make when you are busy cooking the turkey and all the trimmings.  If you have purchased frozen prawns please make sure they are thoroughly defrosted before eating.  They need to be left to defrost naturally and NOT defrosted in a microwave.  Firstly wash your lettuce, I like a crispy iceberg lettuce but any lettuce leaves you like can be used, even pre-prepared packs.  Arrange a few leaves on each plate, bowl or glass.  For a real 1970’s feel arrange in a wine glass.

Next task is to make the Marie Rose sauce.  In a separate bowl add the mayonnaise and a squeeze of tomato sauce.  Taste and continue to add tomato sauce until the Marie Rose sauce is to your taste.  Ad the prawns to the top of the lettuce and drizzle some Marie Rose sauce.  Serve with a wedge of lemon and enjoy.  It really is that simple!  For a special luxury treat you could always add strips of smoked salmon as well.

    I do love a prawn cocktail….We don’t have a starter on Christmas day, instead we will be having it tomorrow night 😀 x
