Recipe; Coronation Chicken Finger Sandwiches

Coronation chicken or Poulet Reine Elizabeth is an English dish of boneless chicken traditionally seasoned with parsley, curry powder, cumin, turmeric, ginger, and peppercorns, mixed with mayonnaise, and dried apricots. The original recipe doesn’t contain a single sultana, only dried apricots , and the dressing includes a balanced mix of spices and creamy mayonnaise.

Why is This Dish Called Coronation Chicken?

The original Coronation chicken was invented by writer Constance Spry and the founder of the famous Le Cordon Bleu cookery school Rosemary Hume, while preparing the food for the banquet of the coronation of Queen Elizabeth II in 1953.

Just like King Charles III’s Coronation Quiche recipe, in 1953 Queen Elizabeth II’s coronation was marked with a dish.

What Wine Goes With Coronation Chicken?

Pinot Noir is a light to medium-bodied red wine that can be an excellent choice for pairing with coronation chicken. This wine has a refreshing acidity that can cut through the rich flavours of the dish, while its subtle earthy notes can complement the chicken’s savoury flavour.

Ingredients

  • cooked chicken
  • dried apricots
  • mayonnaise
  • crème fraîche
  • olive oil
  • curry powder
  • white onion (or shallot)
  • red wine
  • bay leaf
  • lemon juice
  • a pinch of sugar
  • salt & pepper

Method

  1. Heat the extra-virgin olive oil in a large frying pan over medium-low heat.
  2. Add in the onion, bay leaf and curry powder and gently cook for 2 minutes.
  3. Add in the tomato paste, red wine and water and bring to a gentle boil.
  4. Pour in the lemon juice and a pinch of sugar, then season with salt and freshly cracked black pepper to taste.
  5. Simmer for 2 minutes, until the sauce is slightly reduced, then remove from the heat. Strain the sauce through a fine sieve and allow it to cool.
  6. Once the sauce is ready, you can fold in the remaining ingredients. In a large bowl mix together the prepared sauce with the mayonnaise, chopped apricots and crème fraîche.
  7. Add in the chicken breast chunks, optional almond flakes, and mix gently all the ingredients together.

What Do You Serve Coronation Chicken With?

Coronation chicken can be served in a sandwich, on a jacket potato or with rice. It is traditionally served cold.
