Christmas Stress, why oh why do we stress over what is basically 1 day.  I never stress about Christmas at all.  Can’t understand why people do. It’s just one day with a roast bird slightly larger than your typical Sunday roast. Our kids worlds are not going to end if they don’t get everything they want. A few years ago I suddenly had 2 non believers.  Even now it makes me sad. Christmas would forever more be different from the ones that came before. Different….very very different. Christmas isn’t Christmas without homemade mince pies. Flaky buttery sweet pastry encasing rich mincemeat full to the brim with rich decadent fruits and that lovely sticky sauce. If you’re lucky it will also have a little alcohol, brandy for example, mixed in as well. My Grandmother was a tremendous sweet pastry cook. He pastry was to die for.
